so yesterday was shivratri - the celebration of shiva's marriage. Shiva is traditionally associated with the himalayas and as such his holiday is probably the most important of all the religious holidays for kashmiri hindus.
so i was eating a lot of traditional kashmiri dishes, among them a curry of apples and eggplant and one of my favorites - razhma gozhi or red kidney beans made with turnips, the turnips cooked long enough to become almost a vegetable equivalent of bone marrow. In the winter months, this is often made with dried turnips which soak up the juices of the dish to become even more flavorful.
anyway, it struck me that this bean, though not an uncommon one is rarely seen. I like the punjabi version as well, which doesn't feature turnips and makes use of tomatoes, and would think that it would show up more often, especially as the veggie dishes you most often are basically the ones in the punjabi canon.
While thinking of bean dishes I would like to see more often I also wished for roongi or black-eyed peas which aslo for some reason doesn't seem to show up too much.
I gues this is a long way round of asking, if people know of placs offering these dishes, especially good versions.
