While I don't know if this actually counts as eating out in Chicagoland given this won't be an option until 2008, I did hear yesterday from some of my former colleagues at Artisanal Cheese Center that Terrance Brennan will be opening up a version of his love it or hate it cheese-themed brasserie
Artisanal Bistro.
Apparently it will be in the loop, somewhere near Sofitel.
I tried to locate a press mention of it to no avail.
