My favorite soup in the whole world is the tom kha gai at
Thai Sookdee in downtown Evanston. I don't ask for it extra spicy or mild, I just order it, and it comes out nicely spicy (although if you don't like spicy food, you might want to ask for it mild).
Another really good chicken-based soup is the white bean chicken chili at
Simple Gourmet. You can check the menu on their website to see which day; they have it about once a week, and they usually run out by the end of the day.
