    LTH,

    Third year in a row we have had the privilege of cooking for Harbor Light Broken Bottle ceremony. Humbling and soul satisfying to work once again With Captains Merrill and Nancy Powers.

    In the past steak has been the focus, this year Jazzfood/Alan Lake suggested cheffing up the sides with twice baked potatoes, fresh, as opposed to frozen veg, and long simmered greens with ham hocks. Chef Lake made the greens, first time I've ever heard gastrique used in conjunction with ham hocks and greens. :)

    Ironically we went from the Broken Bottle dinner to Weegee's', which was hopping on Friday evening. Alex owner/bartender extraordinaire in rare form, the perfect wind-down.

    Great day...my first cook with the LTH crew. And those greens were GOOD. Didn't even need hot sauce! Looking forward to doing it again at Christmas--this time will try not to lock my keys (and bag and money and ID) in my trunk.

    What a fun LTH tradition. Even without the suit or belly bumping, I had a good time and enjoyed seeing the return crew, new volunteers and Salvation Army friends. I hope we can do it again.

    Thank you for the opportunity to pitch in and help. Food was ready right on time at 4:50 sharp and ready for 5:00 server for 200+ guests. Gary and Alan had everything under control, despite the 200 individually vacuum packed steaks, so food for 200+ went off beautifully.

    The steaks were tender and delicious, nicely seared and seasoned. None of the ham hocks from the greens went to waste, as guests made special requests for them. All in all a great meal as evidenced by smiles all around.

    h_s, you should really put that vid into a holiday email to your family and friends. It's so festive.

    All, sorry I missed this event (hope to make Xmas SA extravaganza).

    Looks like usual fun, which is what one would expect from Messrs. Wiviott and jazzfood.

    Once again, a wonderful event by Messers Captain Powers, GWiv, Jazzfood, et al... A truly wonderful contribution by everyone and those greens sound killer.

    My chef at a huge Dallas convention hotel prepared Thanksgiving dinner every year in the hotel's banquet kitchen for thousands, which was then distributed all over the Metroplex. Folks from every department of that hotel participated.

    My hat is off to all of you who participated!

    Hint: next year, purchase layout pack steaks, rather than individually cryovaced ones, and save lots of time as well as plastic.

    Steaks were not supposed to come individually wrapped, I specified. There was a miscommunication.

    A fun rewarding tasty time was had by all, just glad wasn't the one opening the steak packages or, for that matter, cleaning, cutting and trimming the endless field of greens.
