    La Bocca della Verita' in Lincoln Square is offering fresh white Alba truffles this weekend! Talk about "old school" - they'll be weighing then shaving the truffle at the table when you order - totally cool. Sure it will be pricey by comparison to fresh black truffles, but OMG - what a tasty treat - the queen of all truffles!

    I'm interested in trying this Italian classic. Any idea how much it will cost?

    Just bought a 1/4 lb for a client. Wholesale they're going for between $1,600 lb (quail egg size) - $2,200 lb (chix egg size).

    We're pricing them as an addition. The basic dish is tagliolini, sauced with butter & parmigiano reggiano, for $13. Add 5 grams of shaved white truffle for an additional $38. 10 grams (on a single order of pasta), add $70.

    Just got a wholesale price in NYC for $100/ounce. By comparison Eataly in NYC has them for $90/gram.

    Now that sounds promising ... and I've had several really enjoyable meals at La Bocca ... great spot to bring a gang for Italian at a sensible price.

    Not that it's hugely relevant here, but I think you may have mistyped, Dutchmuse. Eataly's are about $7.80/gram. This past Sunday they had a big white truffle sale where they were like $5.60/gram or $28 for a 5-gram shaved-over-whatever-you-want portion.

    When products attain that status and price, their is usually an almost total loss of whether the product is the real thing and where in the life of the product, the individual truffle is. Truffles are used because of the intense aroma or outgassing that occurs. This aroma is not inexhaustible and fades. We used to purchase them from a reliable source in New York with shipment from Italy and then to us handled by Air Mail for the shortest time between harvest and usage. With what i see today available and the price levels available, I don't order them anymore nor request them in restaurants.
    There are artificial esters available that mimic the white truffle essence, these are usually used in truffle products such as oil and can be discerned and well as give you a head ache. I would suspect that maybe the 'bargain ' whole white truffles are infused with this ester?-Dick

    Hi Bryan

    I was at Eataly yesterday and a sign said $90 per---and they had a 'g,'. But I looked online and it says $5/gram on sale, so obviously that's the correct price. Thanks for catching this!

    Anyway I get them wholesale so I know that price--$100/ounce.

    Ours flew in from Italy on Wednesday, came to us straight from the airport, are now buried in a jar of arborio, stored in a cool basement, and will never be adulterated with anything.

    Just had the new white truffle dish at Boca de L :) a Verita. Very generous portion of shaved truffles for only $38. They said they would have the truffles for the foreseeable future. :)
