    Anyone recccomend any Chicago area locations that make a white pizza pie without tomato sauce? Was in NYC and it's huge out there.

    Hi,

    Caponies on Harlem makes a white pie, which I ordered there maybe 2 years ago. I don't recall the particulars, though I recall not be interested in ordering it again. Of course, I was with a vegetarian and it is possible we were obliged to amend the white pie to the level where I was no longer interested. So maybe it wasn't bad itself, it was the changes we made that were the problem.

    Long story short, they offer a white pie.

    The pizzeria Piece, which has some manner of connexion to New Haven, is said also to offer white pizzas. A search on this forum should provide further details.

    Aurelio's No. 27 comes with your choice of red or white sauce. It's a fresh spinach, tomato, mushroom and garlic pizza. Can't tell you how good it is at any of the outposts, but I like it from the original store in Homewood.

    I feel a little sheepish recommending it, but you might want to give Homemade Pizza a try.

    Sheepish because it's a chain and to the uninitiated may seem a small step above frozen pie. But I walk right past one of the locations on my walk home from the Metra. They provide you an uncooked (never frozen) pie and you cook in your oven on parchment paper (provided).

    They have a good handful of white pizzas. The only one I've had (because I've seen no reason to stray) is the wild mushroom pie. Good crust bubbles, delicious mushrooms, excellent seasoning (needs only a little salt).

    I would recommend trying Piece. Not sure if it's the type of white pizza you're looking for, but theirs basically replaces the standard tomato sauce with an olive oil base. They claim it's "New Haven" style thin crust, but having never been to New Haven I can't vouch for its authenticity. I've always enjoyed it though. Plus they have pretty good beer they brew on the premises.

    I'll third (?) the recommendation for Piece. My only caveat is that their pies don't seem to travel well. A Piece pie in-house is exponentially better than one taken away.

    Seems like there are not many places to get a white pizza and for those of us living close to downtown, only Piece does it. I called the Aurelio's downtown and they do not make a white pizza, FYI.

    Hi,

    The Silo in Lake Bluff makes a variant of a white pie. I had it recently as a personal pan pizza type and found it was overwhelmingly doughy. If I were to try it again, I would go for thin crust.

    Tried Piece a long time ago, after they'd first opened up. IIRC, their white pie had mozzarella on it, which Pepe's does not. Also generally found Piece to be very uneven in the quality of the dough/crust.

    Piece is my favorite thin crust option in Chicago. I have always loved the New Haven variety (slightly charred and crispy), maybe even more than the foldable slice I enjoyed growing up as a kid in NY. But I still have not found that NY slice in Chicago, despite many tries.

    But Piece is very good, particularly its white pizza which has olive oil, garlic and mozzarella (not tons though) -- garlic is certainly tasted. Piece also offers some very interesting beer selections. When I go to Piece (last time was about 2 weeks ago), I typically order the white pizza. Last time I topped it with fresh tomatoes, basil and artichoke -- it was very good. But I must say that I never grew as fond of the white clam pie, although I do like clams.

    there is an italian placei n Oak Brook shopping center that serves those..the name of the place escapes me though

    Pizza Capri @ pizzacapri.com had a wonderful "gourmet" pizza
    four cheese with sliced tomatoes (no red sauce) except I think
    their high priced & in a couple trendy, as in no parking,
    neighborhoods.
    Don't start sending me nasty e mail but California Pizza
    Company? makes a frozen thin crust white with maybe
    spinach for about $5. which is pretty good for frozen.

    Piece is not my favorite pizza, though it's not bad. They do make a white pie. My husband REALLY doesn't like New Haven style pizza, and he said it was OK - it wasn't as burnt as New Haven style, and had more toppings than typical New Haven style. I thought it didn't have much topping at all, but I like the crust better than My Pi which is nearish to it. The crust seemed similar to Homemade Pizza or Dave's Italian Kitchen.
