    Dr. Cutie and I enjoyed a birthday dinner (mine) recently at this newly opened successor to C Chicago and sister restaurant to Chicago Cut. Before going further, I must note that Chef Flanigan, executive chef at Ocean Cut, is my next door neighbor.

    That being said, the environment and decor at Ocean Cut is simultaneously modern, airy, and cozy, with large windows on all sides providing a panoramic street view. The "Elevation Dinner" menu selection is a good deal, for $80, choice of starters, second course, and entrée. The wine pairings feature glasses of Dom Perignon Champagne, Kistler Chardonnay and Kistler Pinot Noir, with unlimited refills. Having read that the Crispy Pork Belly and Snails is a highlight, I must agree. It was amazing. My second course, the Squid Ink Tagliolini was also terrific. The octopus sliced thinly, on first look, almost looked like slices of garlic. The pasta was perfectly done, and the ragu was delicious. For the entrée, I ordered the whole Branzino, again beautifully prepared. We had informed Chef Flanigan that we would be dining this evening, and between courses, he prepared a few "extra" items for us to enjoy. The first, a half dozen oysters with enhanced "liquor", rendered the oysters a little sweet, savory, with just enough acid adding to, and further enhancing the essence of oyster. Another extra was a course of smoked trout, crème fraîche, asparagus and trout roe. Lovely indeed. Three deserts, carrot cake, chocolate cake with a chocolate ganache, and key lime pie, "bombe" style, served with a glass of Far Niente "Dolce", their awesome desert wine.

    It was a thoroughly enjoyable dining experience, and I eagerly look forward to returning. I'm thrilled to have Dirk back on the culinary scene again.

    I knew my nights of AYCD Cristal and then subsequently DP would eventually catch up to them!
