Not sure about the pancakes but that linked youtube video was very interesting... Emma's Goodies over the top bubbly personality (hand movements and voice) seemed as though she was putting on a act for social media which made the video hard to watch and listen to.

I have made them, because I was just fascinated by their height and airiness. Certainly, you can give this a shot. It will save you lots of time hunting one down.

Hi,

It was a cross between eating a pancake and a souffle. My Dad's preference in pancakes are thin, ie blini, Swedish pancakes or crepes. He really dug the Japanese Souffle Pancakes.

I thought I had documented making those pancakes, but apparently I did not.

I'd be interested in finding these in Chicagoland as well! I loved these on a recent visit to Tokyo. (Below, Flippers Cafe and A Happy Pancake, both in Omote-sando).

And yes, I have video of them wiggling and jiggling.

Not those, but we had another unusual pancake derivative in Yokohama. Described as Hawaiian, the stack was topped with a veritable volcano of whipped cream and they came with a variety of super sweet tropical syrups. I couldn't get through more than a quarter of it, but those skinny Japanese easily downed an entire plate, some with an omelet on the side.

She also does a cheesecake in that style which is also quite good.

Just had an excellent version of these last night at Sushi-San. Friend says all of the ***-san restaurants have it on their dessert menu. Paired perfectly with black sugar syrup.

I don't think the ones made with a ring mold look as appetizing. They appear as if they are cut from a larger sized pancake.

Am I the only person that prefers my pancakes and waffles (relatively) savory with unsweetened egg gravy and only the last serving with a fruit preserve of limited sweetness, eschewing any syrup?

These pancakes do look interesting, even lighter than the waffles we (my father) always made with whipped egg whites folded into the batter.

Are there any videos where ALL of the jiggle is in the pancakes and none in the presenter?

Now I'm thinking....could I make the egg gravy also with whipped eggs, maybe extra whites, and cream instead of milk....

The ones at Sushi-San (63 W. Grand Ave.) are mentioned and pictured in the article about Japanese desserts in the new (September) issue of Chicago Magazine as well as on their website.
