As I mentioned
elsewhere,
Spoon Thai is one of the best places in town to sample from the class of Thai drinking foods, called
kàp klâem. And, in addition, it is perhaps the only place in town where you will find
nãem khâo thâwt on the menu.
Along with
nãem khâo thâwt, another exceptional
kàp klâem offering, and one that is
nearly unique to Spoon, is the traditional salad,
kao-lão mũu yâw.
kao-lão mũu yâw
For the preparation of this dish, pieces of
mũu yâw sausage are gently steamed with beansprouts and chopped Chinese broccoli. For service, these ingredients are then blended with slivered red onion, scallion, cilantro, dried powdered chile, fish sauce, and plenty of sugar. The flavour profile of the finished dish* is dominated by the sweetness of the sugar, while a faint heat from the powdered chile lingers in the background.
Regards,
Erik M.
* The finished dish arrives to the table at roughly room temperature.
