    While spending time in Spain during college, I became enamored of chicken croquettes. They were the perfect early evening snack as we explored the tapas bars. Back home in Chicago, I discovered croquette dinners at Howard Johnson's restaurants, and as a business lunch special at Berghoff's once a week.

    Haven't thought about them too much recently, that is until yesterday, when I suddenly craved a chicken croquette dinner. They are on Ann Sather's dinner menu, and as we were to be in Lakeview, we headed there for dinner. Alas, they are closed on Tuesday. Today, it is hard to think of much other than the missed croquette dinner.

    I know there are some ethnic versions of these tasty little guys, and there are some nice mentions elsewhere on LTH. But what I'd like to know about are places that serve them as a (retro) dinner, with sides like mashed potatoes and creamed peas. Any suggestions?

    I cook in the Spanish style, and for the most part, my results exceed those of Cafe Iberico. That is, with the exception of Chicken Croquetas. When I have a tapas party, I run down to Iberico, pick up a dozen from their delli area, and cook them at home.

    Just the other day, I sampled some ham croquettas at GNR nominee La Unica. They were far from the best version of these I have had, but they were definitely good.

    ok, I know it's bad, but I really like the Goya brand croquetas. I have found them in ham & chicken..mmm

    I attempted to order them at La Unica today, but they were out.

    When I was in 7th grade, there was a film strip on how to make a cream sauce. If you went for the thickest sauce of 4 T butter : 4 T flour : 1 cup milk and 1 t salt, then you were in croquettes range. Make the thick cream sauce, fold in your ingredients, cool, shape into cones, roll in fresh bread crumbs and deep fat fry. I remember the film strip like it was yesterday though I have never used the information.
