    can someone tell me why they dont use goat or pork at the maxwell street market? may be my friends pulling my chain!!

    There was certainly pork there on every visit I've made; goat, however, we were told while making the video, is barred by the health inspectors, for no reason that we can particularly understand at a market where fish, chicken, and other deadlier beasts are served.

    yes you are correct!! is it that goat meat is not regulated or processed? it seems to be in the same family as lamb or veal.
