Help--suggestions for great Mexican food for 50 (southside)?

I have been a long-time lurker in the forum, and now am asking for help:

I am putting together an informal (buffet-style) dinner for about 50 people at a conference in Hyde Park this May. Being tired of all the typical Hyde Park offerings, I am trying to locate another local option, preferably Mexican.

I checked out a couple places in Pilsen (Cuernavaca, Nuevo Leon) but was disappointed with the food (Cuernavaca) or the options for catering (Nuevo Leon). I also thought about Lao Sze Chuan (nearby and delicious) but I am still holding out for Mexican (and I grew up eating great Mexican food in Los Angeles, so I am looking for something really good! And vegetarian-friendly too.)

I have about $500 to spend. So I am turning to you, LTHers. Thanks for reading my plea!

How about La Quebrada? I'm pretty sure they offer catering.

You might also want to give some serious consideration to having Chuck's do the catering. He does very good Mexican food [see the thread about the LTH dinner]; I believe that he's a Bayless alum, but I'm not going to try to dig out that info at the moment. And, as several of us experienced at Mardi Gras, he has seriously good catering chops.

And he's straight west of Hyde Park, to boot.

That's a great suggestion. Chuck is a great caterer and makes great food. I was there last week and had three different Mexican dishes (enchiladas in red mole, panuchos, and a duck masa turnover thing) and all were excellent. I usually go for more of the "southern" dishes at Chuck's like chicken-fried-chicken or fried catfish, but his Mexican selections have been really very good.
