    Does anyone know where to find sisig in Chicago? It is a filipino bar food (chopped pork head marinated in lemon juice and peppers - sounds delicious). Have been searching but can't find any. Thanks

    It's on the menu at Filipiniana in Niles: #51 under "sizzling dishes". Never been there, please do post if you try the sisig there. You can get sisig in cans in the Philippines, have you looked in filipino grocery stores? Some day I want to open a bar with bbq and filipino bar snacks...

    If you get canned sisig, I recommend softening some onion in a good amount of butter, adding a can or two of sisig, and then frying it until fairly dry. In fact, if you fry it undisturbed for the final few minutes of cooking, you'll get some crunchy bits at the bottom that are quite delicious. Garnish with hot sauce and calamansi (tiny lemon, or just use lemon) juice. It'll be fairly close to what you'd get in Manila.

    I agree with the comment above that this dish is most at home in a bar. Vacationing a few years ago, the perfect night out in the Philippines was a group of friends sharing a few plates of sisig and fries, a few (too many) bottles of Red Horse, and listening to a live band cover Evanescence. I'd kill to have something like this in Chicago.

    I believe they do, though nothing I can recall off the top of my head. They also sometimes carry San Miguel and Red Horse.

    I've found that the places ususally serve 2 styles of sisig. A wetter version with more of the cartilage parts of the the pig, ear, and face sometimes served sizzling and with pepper. The dryer style is more like really chopped up lechon kawali with onions, vinegar, seasoning, and peppers. I don't think either versions served here are as good or authentic as the Philippines, but they are still tasty. The wetter versions come closer in authenticity than the dry, but I like the taste of the dry ones more sometimes.
