A while back I was in charge of picking up dessert for a work event and decided on cupcakes from Molly's. I ordered 1 dozen regular cupcakes in a variety of flavors and 1 dozen of their center filled cupcakes also in a variety of flavors. Here is where I had a little issue when I ordered the center filled cupcakes I expected the centers to be either somehow shot full of the filling like a jelly donut or somehow magically baked into the cupcake center kind of how the molton chocolate cake is made so when you slice it open the center ozzes out. Part of my issue with the center filled cupcakes is based on the reason that I think in addition to the flavor and presentation of food the how did they do it factor is part of the experience just as much. So when I took my first bite and saw all they did was scoop out the center of the cupcake before it was iced filled it with filling then iced over the top to cover the hole with the filling I was disappointed. Sure it still tasted good but after paying almost twice as much for the center filling I guess I expected more. The last issue regarding my center filled cupcake quandary is the inconsistency with which each cupcake was filled some where generously filled and others had just a dollop of filling. The inconsistency of the filling brings me back to the money issue $2 for a regular cupcake and $3.5-$3.75 for center filled for the difference in price I expect more from the center filled. Maybe its a bit like finding out how the magician did his magic trick you thought was so cool to find out it was only a mirror or a hole in the floor that made the trick work. Then you are caught sitting there with a blank stare on your face your mouth hanging open saying "that's it". Guess in this case at least I had a cupcake in my open mouth ..which all in all still tasted pretty good. Has any one else had similar experiences?

Filling a cupcake can be done in so many ways. I love to invent and bake cupcakes with various fillings. I've done both piping and scooping to put the filling inside the cake and I prefer the piping method, in which the cupcake is injected with a filling. It's more consistent and cleaner. however, it completely depends on the type of filling be used and the type of cupcake being filled. Either way, it's majorly labor intensive. I'm guessing that's why the price difference is so large.
Regardless, if you're going to charge that high of a price, then at least make it consistent. Cheers.
