When products attain that status and price, their is usually an almost total loss of whether the product is the real thing and where in the life of the product, the individual truffle is. Truffles are used because of the intense aroma or outgassing that occurs. This aroma is not inexhaustible and fades. We used to purchase them from a reliable source in New York with shipment from Italy and then to us handled by Air Mail for the shortest time between harvest and usage. With what i see today available and the price levels available, I don't order them anymore nor request them in restaurants.
There are artificial esters available that mimic the white truffle essence, these are usually used in truffle products such as oil and can be discerned and well as give you a head ache. I would suspect that maybe the 'bargain ' whole white truffles are infused with this ester?-Dick
