    I am looking for a restaurant to go to this weekend that would have some fresh wild salmon on the menu- I was hoping for western suburbs and my favoroite place-Vie, but it has not yet made their menu yet.

    Anyone have any ideas other than of course Shaws?

    Maybe I am just a little too early and should wait a couple more weeks

    North Pond and Naha come to mind. I'd be surprised if places that are known for fresh fish don't have it (or won't soon). Call someplace you like and they'll let you know. Try Catch 35 in Naperville (or Chicago).

    I had Copper River salmon at Chinn's last weekend, which--to the best of my knowledge--was wild-caught. Of course, Chinn's is north (Wheeling), rather than west. If going, it's probably best to call ahead to make sure they have it that day.

    Chinn's in lisle serves a great copper river salmon at least til the end of june!!

    Soon towards the end of the month, it will be Copper River Salmon season. Any recs on restaurants that may be serving this summertime specialty? I've reviewed the ongoing thread/post of places to purchase CRS - just curious what restaurants tend to serve this or if it's completely dependent on season availability...

    Season's 52 had it on their menu last year, and say that it could be on their spring specials menu this year. Call ahead to check.
    I'm not a big salmon fan, but thoroughly enjoyed this.

    Saw Copper River Salmon on the menu at Bistro 110 on Friday night--about $32, I believe.

    I haven't seen Copper River yet on any menus this season but I have seen some wild Alaskan salmon of other origins on a few. I've been told that the season's a bit late this year but don't know how accurate that is.

    Tin Fish in Tinley Park offers it annually when it is available. I haven't received any emails yet letting me know if it is there.

    You can expect to find Copper River salmon this Thursday, and get ready...wholesale pricing is starting out at $30 a lb. for fillets.

    $25.99 in Seattle this morning (according to a friend who bought some for dinner)
    So, $30 here is not too bad...
    I'll buy it ONCE at that price and then wait till it hits Costco.

    I saw some Copper River salmon today at Dirk's. I think it was $30/lb. The sign said "first of the season". It looked pretty good.

    Nightwood had Copper River Salmon Rillettes as an appetizer on the Monday, May 23rd dinner menu.

    I didn't try them though.

    Retro Bistro announced yesterday that they have Copper River salmon on their specials menu. My wife ordered it last year when it was in season and the one bite she gave me was out of this world delicious.

    Copper River salmon was the fresh fish of the day today at the Italian Village. I passed on it since I grilled a delectable fillet at home just this past Sunday.

    We went to Prairie Moon in Evanston last Saturday and they had a Copper River salmon special. It was the first of the season. My husband ordered it and made all gone. I had a bite and it was delicious. And great horseradish mashed potatoes. And many beers on tap as well.

    Give them a call to see if it's still on the menu.

    FYI, Bob Chinn's in Wheeling still had Copper River salmon as of Saturday, July 16. Receipt was posted as flown in that day. The server said it will be disappearing any day now.

    It was phenomenal as always.

    The Wife brought home a big Copper River fillet from Costco last Thursday (I know you're looking for restaurants, but if you love the stuff, you might want to cook some up at home -- Memorial Day BBQ?).

    Standard Market in Westmont (on Ogden) has fresh, wild caught Copper River Salmon as of today. They just got it in.

    Bought a nice 3-pound piece for grilling later today.

    I got an email from Bob Chinn's in Wheeling on Thursday that the Copper River Salmon is now in.

    In the email, they do recommend calling first to ensure availability: 847-520-3633.

    Last week, I was invited to spend a few days at Skuna Bay, a salmon fishery in Nootka Sound on Vancouver Island. The Skuna Bay fish farm is surrounded by some of the most beautiful country I’ve ever seen: snow-capped mountains lined with pine, fresh air blowing in off the ocean, clean water, and nowhere in sight a smokestack nor even much terrestrial life except for the random bear and a handful of salmon fishermen. There may be some First Nation’s folks in there somewhere, but I didn’t see any.

    Skuna Bay makes an effort to run their fishery in a sustainable manner, by limiting the number of salmon they nurture and by putting into place other practices that ensure our grandchildren will be able to eat salmon. Skuna Bay is the only salmon farmer in the world to receive Best Aquaculture Practices certification. All of which would mean little if this were not stratospherically tasty salmon.

    One night, in the kitchen at The Lodge at Golden River, we sampled some sashimi, just salmon loin, sliced thin, served raw by Chef Terry Macdonald, with a bowl of wasabi and soy on the side. One taste, and I knew I didn’t want any of the wasabi and soy. Although it’s a very good complement to raw fish, I just couldn’t bring myself to cloud the flavor of the fish with any condiment. The fish was so clean tasting, so rich with light-tasting fat, so beautiful just to look at.

    We eat a fair amount of salmon at home, and we try to get the good stuff. As I mentioned above, you can get fresh Copper River salmon at Costco, a fine piece of fish; at that same Costco you can also get frozen salmon, which we found almost inedible. Chicagoland restaurants carry salmon at both high-and low-ends of the quality spectrum, of course, but none are quite like Skuna Bay. It’s not another damn salmon; it’s almost tastes like a different species.

    Unfortunately, I don’t think this fish is generally available to consumers, though you can get it at Standard Market (it's like $80/fish wholesale, but as Lance said about the black heroin in “Pulp Fiction,” when you try it, you’ll know where the money went). Fortune Fish carries Skuna Bay as well as a lot of other cool stuff (Art Jackson told me last night that he gets eel from FF for his eel pie – and he plans to make a special lamprey pie in honor of HRM Elizabeth for her Jubilee celebration – that dame has eclectic tastes).

    Isaacson and Stein Fish Company got some in this week for 16.95/lb. They sell to the public, though hours are somewhat limited. Fantastic place to get fish in general.
