    In the past few years, we have not been able to find a crisp, tasty Red Snapper Veracruz at any of our local restaurants. I'm sure that this marvelous dish is being served somewhere, but the ones we have tasted recently are bland and/or poorly cooked. Can anyone recommend a restaurant that serves an excellent version of this? If necessary, I'll start buying fish and frying them myself, but I'd prefer to take the easy way out.

    As we live on the South side, we prefer restaurants in Chicago or in the South suburbs.

    If you have to make it, I really like thisBon Appetit recipe for Veracruz-style red snapper. Although it's baked, I'm sure it would be fantastic if done fried. When I make it, I often pair it with Rick Bayless's recipe for green poblano rice.
