Eggs on Eggs, daytime photo by G WivI couldn't agree more about the glory of this dish, which kicked off a recent dinner at BoB -- my first there since the fall of 2015. And wow, what a way to start a memorably great meal! This rolled, French omelet was impossible, ethereal perfection. How eggs and this much butter could be transformed into such lightness is a thing of beauty and a marvel of old-school culinary physics. More on the outstanding food in a moment.
One thing that had not changed in the 2.5 years since my last visit was the visual appeal of this dining room, which remains one of the most distinctive, beautiful and comfortable restaurant spaces in the entire city. It's warm, elegant and charming, but it's also immensely comfortable. It's a fitting setting for a menu of food and beverage offerings that also stand out. No one else in town is brewing beers in-house like co-owner Michael Carroll (Alinea/Dark Matter/Half Acre alum) and pairing them with their food offerings at anywhere near this this high a level. And the wine pairings, conceptualized by co-owner Craig Sindelar (Alinea alum) are fantastic, too. I cannot help but love it when this much holistic thought and care are put into the dining experience.
We opted for the tasting menu and enjoyed a couple of add-ons that were sent out for us by the kitchen (the Eggs on Eggs being one of them). 2 of our trio had the beer pairings and 1 of us had the wines, though we each tasted all the beverages. I wish the images that follow were better but it was dark and all I had was my cell phone . . .

Crab & ShrimpJumbo lump crab, shrimp veil, roeFor me, the culinary connection between BoB and Alinea was never more apparent at this meal than in this dish. The shrimp veil reminded me of a dish I had way back in the day at Alinea. Of course, I could be misremembering the specifics. In any case, there is an undeniably strong cultural connection between the two entities, which manifests in a number of ways throughout the dining experience, especially with the carefully curated beverage pairings.
PastaI'm not too sure about what's in this one, as the current description on their website doesn't seem to match up with the version we had. Nevertheless, the al dente pasta and pungent cheese won us over.
EggplantFried eggplant, old bay naan bread, red curry aioli, pickled fresno chili, mint, cilantro, radishI loved the light, ultra-crispy exterior of this pair of mini eggplants; so much so that I tore into one of them before I remembered to click it. The dish itself was a very tasty combination of flavors and textures.
Whole Roasted Black BassEaster radish, yuzu tea, avocado mousse, mini yellow tomatoesProbably my second favorite dish of the meal. What's not to love about a whole, roasted fish cooked to moist and flaky perfection? The accoutrements were great, too but this fish would have been awesome if served alone on a paper plate!
Lamb SaddleFava beans, lamb bacon, panisse, petite greensA multi-dimensional umami bomb. As full as we were, we ooh'd and aah'd over this one before we took it down.

There's so much to love about Band of Bohemia. I went into this meal knowing to expect a distinctive experience; a singular blend of the talents in the house, and the passions and previous professional experiences of its owners. What surprised and delighted me was just how coherent and evolved the dining experience was from beginning to end. Of course, the food was great but beyond that, this feels like a restaurant that's been around for a long time. It's comfortable in its own skin, and what may seem like a whole bunch of risks if taken elsewhere are just the coin of the realm at Band of Bohemia.
