Kal'ish

Kal'ish short order vegan (I did not know that was a category) recently opened in Uptown. The owners had a catering business/weekend brunch place almost twenty years ago in the space that became Magnolia Cafe, and is now Emerald City. I'm not vegan, but I was craving a salad and Kal'ish has an excellent one called Kal-House. It's a mixture of kale, spinach, squash, beets, nuts, seeds, dried cranberries and ricotta cheese tossed with a pumpkin vinaigrette.

Didn't know vegan ricotta was a thing, but it looks like it can be made from cashews or tofu.
