One of the standouts at Friday night's Baconfest session was Pork Belly Clay Pot from Roaming Hog, a food truck in the far western burbs. The "Vietnamese-inspired clay pot" had marinated pork belly, black garlic caramel sauce, puffed rice, pickled Thai chili sambal sauce, fresh herbs, and sesame seeds. The dish had a fantastic combination of flavors and textures. I went back for thirds.
