Phil Vettel just offered an outstanding review of Wherewithall, Johnny Clark and Beverly Kim's follow up to Parachute.
https://www.chicagotribune.com/dining/r ... story.htmlAlthough they opened in early summer, we went a few weeks ago. We were prepared for the prix fixe of $65 for 4 courses, but were pleasantly surprised when over the course of the evening we got probably 10 items total, including an amuse and 3 or 4 different snacks before the first course, a pre-dessert sorbet, and a mignardise. Overall it was a terrific value and we loved almost all of the dishes. Eclectic combinations and flavors, executed nicely. I grabbed a 6pm reservation on a Friday evening that same afternoon, but found the restaurant filled up quickly through the evening, so reservations are recommended (especially with a stellar Tribune review just out).
I remember our courses included a rigatoni with chili and ricotta, a pink shrimp course that was lovely in its very lightly par-poached shrimp, and a lamb in vadouvan. The menu changes nightly, and I didn't take photos, but suffice to say I would go back in a heartbeat, especially recognizing the $65 price point is a far better value than the 4-course menu would suggest.
Both Chef Clark and Chef Kim were in the house the evening I was there and Chef Kim seemed to do a great job of managing the front of the house, quickly chatting with guests, while keeping everything moving.
