I just published an interview with the Chicago Journal on Ryan Poli, the head chef at Butter, and thought you folks would be interested. Chef Cantu said he had one of his top meals there in 2005 when I spoke with him for the article.

Also, I have posted a podcast (MP3 file) of the interesting parts of the interview that didn't make it to the article, on my website. Notably, I asked Ryan where he likes to eat when he isn't working. He cited Three Happiness. I confirmed it was "Little three". We spoke about the crispy chicken, though that part isn't in the podcast.
