    Does anyone know of a place that has great costillas al carbon?

    Generally I enjoy these when I go to Mexico.

    For those that don't know, these are ribs that are cooked over the grill, but no BBQ sauce. They are generally served with rice, beans and tortillas. You can even get a combo plate of roast chicken (pollo rostizado) and ribs.

    I'm not sure what preparation is involved before putting them on the grill but they sure are tasty.
    Pops - You are deeply missed. There are many baskets of tortillas yet to share. I hope they have good menudo and carnitas in heaven!

    Uncle Julio's Hacienda is not a place I would normally recommend. It is very crowded and it smacks of the kind of faux aunthenticity that you might expect from a large chain. That said, I ate there with a large group once and the costillas al carbon were quite tasty, definitely the highlight of the meal.
