Dumpling Notes: Beautiful transluscent wrappers; nicely flavourful with lots of “juice.”

Other: As strange as it might sound, I am still thinking about the cold-stirred cucumbers which preceeded the xiao long bao. Quickly blanched and chilled, with just a touch of sesame oil, they made for a thoroughly refreshing start to our meal.
