My wife and I had a splendid, modernist, farm-to-table meal at Willows Inn on Lummi Island off the coast near Bellingham, Washington - they have their own farm. Blaine Wetzel is the young (25 year old chef), well-trained at Nomi in Copenhagen. The meal was deliciously modernist without being forced. It was simply delicious. I meant to post shortly after I ate their, but I am left with the photos from July. Lummi Island requires a special trip, but if you can afford a few days, it is certainly worth it. While Willows Inn is not super-luxurious, the food could not be better, at least as long as Chef Wetzel is at the stove.
