Biker Jim, a long time friend, recently opened Biker Jim's in Denver. Jim, the encased meats master of the west, began street vending grilled game sausages off a cart five years ago and recently opened his brick and mortar establishment. Any one that uses a caulking gun to apply cream cheese to a reindeer sausage with grilled onions is okay in my book. Biker Jim was featured on "No Reservations" and in Molly O'Neill's book "One Big Table."
