    I have some sour cherries that I bought last June and have kept in the freezer that I would like to use to make some small cherry tartlets for the holidays.

    However, I've looked through all my cookbooks (and I have LOTS) and can't find a recipe for a sour cherry tart. Cherry pie, yes, but not tarts or tartlets.

    Do you think I could just use the same amount of sugar and cornstarch for a cherry pie filling and it would work for individual tarts?

    I would use the same proportions. The tartlets may not cook long enough to heat and thicken the filling. You may need to cook the filling on the stove, then fill the tarts that have been partially or fully blind baked.
