Saturday night, I had dinner at a catfish restaurant which resides in a former gas station in the middle of somewhere, Mississippi. As good as the catfish was, it did not hold a candle to appetizers from "The Two Bob's from California:"
Pimento Cheese Balls
Roll up a ball of pimento cheese the size of a golf ball or a bit larger.
Roll in flour, next an egg wash, then roll in dry Hush Puppy preparation. Fry.
When I was handed my first one, inside a paper cone like flavored ices are served, I was told it was a hush puppy. I was totally unprepared for the melted cheese flow I encountered when I bit in.
Addictive stuff at one bite. My tablemates and I took turns doing the fried pimento cheese run because we were not sure if they limiting portions to one per person.
Last year, the Southern Foodways Conference had a Pimento Cheese recipe contest. I bought a copy of the book which has at least a hundred variations on pimento cheese. I also bought Duke's mayonnaise, which is a favored ingrediant for this cheese spread.

BBQ Brisket Eggrolls
The other appetizer was BBQ brisket wrapped in eggroll skins and fried. That is whole recipe. For serving, they cut the eggroll into diaganol pieces. The BBQ sauce was a bit frisky, as much as everyone enjoyed it, I like the pimento cheese better by a lot.
A catch phrase used throughout this event: "There's no meeting without eating!" You have to love people who think so clearly and have all their priorities straight!
