I wouldn't say I'm a professional chef...only at home , but I'm a pretty good judge when it comes to beef.
For about $8.00/lb. I can get choice, dry-aged NY Strip from Whittingham's in Alsip! I have had only one issue with a whole strip loin and they quickly gave me another whole strip loin hand picked at no charge! That's what keeps me going there.

How sure are you about the location and telephone #? From the website, Wittingham's appears to be elsewhere.

There are different levels of USDA Choice and Prime, and it certainly possible that a dry aged choice can be every good.-Dick

There is another Whittingham's in Frankfort but they built this one and then sold the building and name.

I took some pics of the meats at Whittingham's. Pretty reasonable considering it's Memorial Day weekend.

Anyway, here's some prices of dry aged meats at Whittingham's this weekend.
Tenderloin = $10.65/lb.
Boneless strip = $8.95/lb.
Short Loin = $8.25/lb.
Bone-in Rib-eye = $8.25/lb.

Prices are typically $2.00 less for non dry-aged beef.
