    Sweet Baboo and I went to Costco today, and bought, among other things, hot dogs and sliced ham. The packaging for both says "keep refrigerated" but nothing about freezing. He was doubtful, but I said, it's just meat, of course you can freeze it!

    I come home and check my Joy of Cooking, and it says (in the section on freezing meats) "salted or fat meats, such as fresh sausage, smoked or brined hams and bacon, should never be held longer than a month."

    But it doesn't say why. Does anyone know?

    We freeze hot dogs and other sausages all the time, and I have never seen any poor performance from them afterward.

    I hate frozen meat. I won't have it in my house if at all possible. Hotdogs are the exception. I always have some frozen dogs in my freezer for "emergencies". I've never been able to detect an adverse effect. I've kept them for up to 6 months past the expiration date and had no complaints.

    I've had some coarser sausages suffer from freezing (in particular, sausage with a high fat content will go rancid if left in the freezer too long, and thoses seasoned with garlic and other spices sometimes go flat). But hot dogs freeze fine for a seemingly indefinite period.

    Doesn't seem to make a difference whether they're natural casing dogs or not, either. (In an ideal world, I would buy only natural casing hot dogs. In an ideal world, they would sell them at 24-hour supermarkets.)

    the reason you shouldn't freeze hot dogs is because a hot dog is an emulsion and the freezing process can break that emulsion causing the hot dog to weep. Weeping hot dog...not good.

    In the past, the old vendor would bring in frozen hot dogs and u can tell the difference. It wasn't much but there was a difference.

    Hotdogs go on sale. One pack goes in the fridge, one the freezer. No problem...no difference in quality. All hail the hot dog.
