I'm going to try to adapt this recipe into an appetizer for Rosh Hashanah:

I'm planning on making little bite-size cakes with a little dollop of the garlic mayo on top (or maybe on the side)

I read in the reviews that the Costco (Kirkland) canned salmon doesn't have bones or skin in it- can someone confirm or deny?

Also, there seems to be a consistency issue with the cakes not sticking together for people...seems like the cause is people not draining the spinach enough or adjusting the eggs...does that sound correct?

There was one comment in there that cracked me up- someone made it with tilapia and orange roughy because their husband didn't like salmon....and then complained that it had no flavor. Um, duh!

Kirkland canned salmon is like their canned tuna: hocky puck consistency, pure muscle. In other words, highest quality.

Sooo, you like wine and are looking for something good to read? Maybe *this* will do the trick! :)

Excellent! Thanks, Geo! Now I know where to start getting my tuna, too! :D
