    Hello:

    I am looking to make Weinerschnitzel in the style of restaurants, where the cutlet covers the WHOLE plate.

    In most grocery stores, and Costco, the veal cutlets are small little things, the "scallopini" type they use for Veal Marsala, etc.

    1) Where can I find a butcher near DT Chicago that sells retail who has the large-size veal cutlets?

    2) I was told I need a veal top round cutlet, and one way to make it even bigger was to butterfly it, so I need a cutlet that is thicker cut directly from veal top round roast, so I can then have it butterflied to correct thickness, right?

    Any help is appreciated.

    What you need are 1/4" slices from the center (the heart) of the veal round, which you can then pound out between sheets of plastic wrap. These will measure about 5 to 6" x 3 to 4" before breading. After the pounding /breading, they'll be huge.

    You would use the butterflying technique with a smaller, thicker cut, like a slice of loin or tenderloin.

    Paulina Market can surely do this for you, but I would call ahead.

    It's not exactly near downtown, but I always go here for veal:

    The meat will be sliced to spec (or not at all) and that particular cut is under $4/lb iirc.

    I called Paulina at they have it for $18.99 per lb. and I called Joseph's meats on Addison (6800 West) and they have it for the same price.

    I'll sure call Farm City, but..........if it sounds to good to be true........????

    From what I understand, Paulina's is more expensive because they are a more traditional butcher shop.. Lots of manual labor involved.

    The first thing you'll notice about Farm City is the long lines and crowds. The turnover at this place is really good and I can 100% vouch for the freshness of all their meat. Try checking out the other meat markets nearby... None of them will be as crowded as this place.
