We spent a week in the Cancun region recently and I'm trying to find a recipe for something we had down there and apparently I am misremembering how to spell it. It was an onion-y salsa-ish condiment that I thought was called "xnipec" and it had a pink-ish color. I appreciate the help. I searched on AllRecipes and Epicurious and struck out on both sites.

No great food adventures to report, as we ate all our meals at the resort. Their food was great, especially the seafood, but not indicative of the culture we were in.

Shame on you! Sounds like its time to leave downtown samlltown and head out to Cicero to see what you missed ! :)

Here's a Rick Bayless rendition of Xnipec.

the feeding only at the resort wasn't all together my choice. the resort was out on it's own, everything was paid for, and since we were on our honeymoon, food wasn't exactly the priority topic :)

I appreciate the links. and I hope we get back down there some day, so I can explore the local food a lot more
