    I have been experimenting with fermentation* lately and am quickly running out of vessels. I have carboys and growlers and the like, but what I really need is two or three gallon jugs or jars with relatively wide mouths.

    These would be perfect:

    The only place I can think of would be the stall at Maxwell Street that sells all the Mexican cooking utensils, but I can't recall seeing big jars there. Anyone know of a confirmed source? Or have another suggestion?

    Dunno if they have quite the sizes you're looking for, but American Science & Surplus is my go-to source for odd containment needs.

    Thanks for the suggestion, Mhays. I didn't see anything on the website that will work, but it might be worth a trip up just to poke around.

    Since posting, I figured out the name of what I'm looking for (barrel jars or pickle jars) and it looks like they have them at the Container Store.

    There's a wine-supply place at 9900-block S. Western, and he's very helpful.

    This does seem like something they would carry, and they are very helpful if you have questions.

    I've recently spent a whole bunch of money at BevArt, yes. But they didn't have this sort of wide-mouth jar. (Their focus is on commercial yeast type fermentations, thus no need for this type of vessel.)

    I did get (sort of) what I needed at Container Store. I also stopped at Cost Plus and found some interesting options there as well.

    So far honey wine (T'ej) and cider experiments have been largely successful, for what it's worth. This warm weather is speeding things along.

    For making Ginger beer, I bought some heavy apothecary type jars at Crate and Barrel (at the suggestion of somebody here). They work well because of the loose fitting lids, which let the CO2 escape. With Ginger Beer, you don't need to worry about contamination. They come in 1/2, 1 and 2 gallon sizes.

    Here is a picture of a jar of Ginger Beer fermenting on top of my mixing board. This is probably begging for a disaster, but it keeps the ginger beer at just the right temperature for fermentation.

    Kinda funny, but lower down on that page is a one gallon jar for $10.79; I bought a gallon of banana peppers stuffed with sauerkraut at Berwyn Fruit Market for $4.99. The jar is almost identical.
