    Aside from a substitution for chicken in the Bayless bible, I haven't found any thoughts or recipes for Cornish game hen here. My main experience with this fowl is at Check, Please! winner [/sarcasm] Medieval Times, where it's drenched in enough butter to be moist, if not particularly flavorful. Interesting but imperfect article here:

    Any good recipes or observations on the lowly game hen here? They're certainly abundant and inexpensive around the holidays at the major supermarkets.

    San-tan-der; I usually roast them per Gary's Stuff Chicken recipe. They roast up quick and are delicious.
