    So today I went to Jerry's & got 4 bolillo rolls for a dollar. To me, the bolillo roll is an unsung hero, in terms of what uses can be applied to it.

    I took the 4 bolillos & placed them in the freezer -their ultimate destiny was yet to be determined. Woud they be garlic bread? The base of a fantastic Italian sub? Lght airy discs spread with brie, or heartily loaded with chicken salad for a quick lunch?

    Well, one little bolillo learned it's fate about an hour ago: It became a very delightful crust for an individual pizza bread. I took a frozen mini loaf out, split it in half while it was still frozen, scooped out the center & filled both halves in with Pastorelli pizza sauce, then topped with provolone & slices of pepperoni. Baked in oven at 400 and the result was fabulous pizza in 10 minutes at a moments notice & for a bout 50 cents. I pulled it out of the oven, & sliced the crusty goodness into 4 pieces each....I loved hearing the crackle beneath the weight of the knife, and the pizza bread, which in actuality was more like real pizza with a flaky buttery crust, was a feast.

    Now if only I could get the girl child to stay up long enough beyond the boring part of Frankenstein (on Svengoolie - of course!) to see the story beyond "IT'S ALIVE"...alas, she is asleep. Maybe next year.

    All hail the bolillo! I can't think of any other roll that can fill every role as well.
    I can't believe I ate the whole thing!
