I tried a sandwich today from Eat Green Foods, a stall selling granola bars, two kinds of sandwiches and a few sides at the Daley Center farmer's market. It's a small operation that tries to use all local, seasonal and organic ingredients. They will be selling at the Green Market, as well. They seem to be trying to get a catering business going and currently use a shared kitchen.
I had a smoked turkey sandwhich, which the meat from Paulina market, the multi-grain, bread from Red Hen, bacon from Wisconsin, pea shoots from Illinois, etc. The sandwich was excellent, although at $8.00, quite pricey. If you want a side, it's $2.00, bringing a box lunch to $10.00. I guess the question is whether you want to pay a premium for having just about everything but the salt and pepper locally and mostly organically sourced. The quality was excellent, and for me, if I'm at the market already, I'll probably get lunch there again.
