So I'm cleaning out the fridge in anticipation of Thanksgiving, and I come across two tubs of, respectively, bean paste and chili paste that I bought for bul go gi at home. I haven't used them since the summer, they were opened and refrigerated immediately. Keep? Toss? I suppose these would qualify under the "when in doubt" rule, but I hate to throw away so much food, especially since it seems preserved anyway.

Are these something that have to be tossed relatively soon after opening, or are they condiments that last? I searched the internets but found no specific information, other than somebody who's doing a doctoral dissertation on the fresh paste found in markets in Korea.

They can stay in your fridge until they dry out... or grow mold... whichever comes first... drying out probably...

Edit: Actually, with the mold in the bean paste, you can probably just scrape those sections away and still continue to use it... it'll NEVER go bad...
