Ok so I called Josephs in Crystal Lake and they said they had it. So I went on up and checked the pork section--no belly! They do have every meat known to man --whole veal tongue anyone? I asked at the counter, and it was the guys who had spoken to me on the phone earlier. One of them went in back and cut me some. Took 2 pkgs each with about 1 3/4 pounds--which was 4 strips -each about 6-8 inches long and 1 1/2 inches wide in each package. Put one in freezer for a rainy day.
Now I'm going to try to cook the one package, 2 different ways. I got the original recipe I was going to try from a workmate--basically an adobo (?)-- water, soy sauce, apple cider vinegar, bay leaf, garlic, and brown sugar. I decided to fry the skins to crackle them, which didnt take long, now I am stove top cooking the pieces ( I cut them into cubes ) on a super low heat for about 90 minutes in that marinade. The other half of the package I scored, rubbed with salt/pepper, ran thru the same marinade, but am letting sit for about 30 minutes. Then I'll high heat roast for about half hour to cook the skin nice, then slow cook for another hour. In other words, I have no idea what I'm doing, but we shall see!
