    I want to make some ginger syrup with ginger juice, but can't find any. I called Fruitful Yield, checked Whole Foods and Trader Joe's. Where else should I look? I really don't have the time or energy to grate a bunch of ginger myself.

    I generate small amounts of ginger juice for my famous BBQ sauce by mashing small pieces of fresh ginger through a garlic press.
    If you need a cupfull or a quart... that's not much help, unless you have a lot of time and strong muscles. :cry:

    Any small grocery (and many large groceries' ethnic sections) will have jarred, pre-grated ginger, just like the canned garlic you see everywhere. It's pretty watery - I bet you could get quite a bit of juice by setting it in a strainer over a bowl overnight - I don't know if they add water or if that's all juice. Or you could make your own quickly and much better by sticking an unpeeled knob of ginger in the food processor (or chunking it up and putting it in the blender) and doing the same thing with the resulting puree. If you line your strainer with a coffee filter, you can squeeze out the last bits.

    I've never seen the juice straight-up (though I haven't been looking, either.)

    I've seen bottles of ginger juice at the Caribbean American Bakery. Call to see if they have straight ginger (the kind I had was mixed with sugar and other fruit juices). The store is in a temporary location after their facade collapsed--a few doors west of the original location.

    If you want to make ginger syrup you don't need to separate the juice. Simply peel the ginger nad cit into 1/2 inch pieces and place into a pot with equal parts sugar and water. Set on the stove and let simmer for 10 minutes, then run the liquid through a strainer and voila, ginger syrup.

    Thanks for the suggestions everyone. I have put this project on the back burner for now, but will let you know what turns up eventually. When googling, it's also apparently sold for use in Chinese marinades, so I'll keep my eyes peeled in that section of the grocery, too.
