    Three Sisters Farm (supplier to Bayless among others) is selling huitlacoche to the public today only. It was harvested 2 weeks ago and is frozen. $24/ lb for this rare opportunity.

    In past years, I've seen it on occasion, fresh, at Henry's Farm at the Evanston Farmers' Market, for $3 or $4 a cob.

    I was appalled. Henry's Farm STILL sells this for $3/cob and its fresh, not frozen.

    any idea how much huitlacoche by weight you get on a cob? (showing my cityboy ignorance)

    Rough guess - about 1/2 pound - but highly variable depending on the cob.

    A cold, snowy weekend with football games on and good beer in the fridge seemed like a good time to use the summer's purchase. Thawed overnight in the fridge, then sauteed in a combo of homemade garlic oil and butter, the Three Sisters huitlacoche was best thing I've tasted so far in this early part of 2009. Earthy, corny, and funky, I ate the delicious, unattractive-looking goo atop El Milagro tortilla chips, and washed it down with Three Floyds' Alpha Klaus seasonal porter.
