i've never been very excited about the breadsmith-the choices seemed uninspired. but i was recently turned on by a friend to their french peasant bread. it comes in a boule or a loaf ( which they can slice) and it makes some of the best toast i've ever had. the bread looks like a very pale cracked wheat and toasts up extremely crispy on the outside (not the same as browned) and the inside is very delicate and light on the tongue. the crust tastes more like one you'd find on an italian loaf-very crisp and with sharp edges that can actually hurt the roof of your mouth. toasted with imported butter and local honey-this has become one of my favorite breakfasts. justjoan
