So long as I live in this fine city, I'll never take my knives anywhere other than
Northwestern Cutlery for sharpening. I don't mind paying a few bucks to have a real pro do the work, especially on
unusual or special knives. You can leave your knives or, if you have a few minutes, stick around and watch as they're sharpened.
Not to rag Sur La Table or Chef's Choice too hard, but I always thought those types of sharpeners did more harm than good to a knife. And it doesn't take a whole lot of skill to rake a blade through one of those machines.
