    looking for winning recipes for fresh cod that can be done pretty quickly (no long marinations) and don't involve deep-frying. thanks in advance.

    Any firm white fish can get the treatment where you put it into a foil pouch - put fish and other stuff on top, fold over, crimp edges, and bake for 10-15 mins at 450F. I put on herbs, lemon, wine, seasonings, thinly sliced veggies, drizzle with olive oil, etc.

    Torsk, or "poor man's lobster," is simply pieces of cod brushed with butter, sprinkled with paprika, and stick it under the broiler until done. Serve with melted butter and eat like lobster. You won't be fooled, but it's a classic dish.

    When I read the post this morning, that is exactly what I was thinking. I would add a wedge of lemon. And more butter. Why mess with perfection? ( as I walk out heading for dinner)
