    Hi All,

    I'd like to make tacos from a pork shoulder on the grill. After some Googling the most common ones I see are al pastor and carnitas which I am not opposed to, but would like to get some input from the LTH'ers out there. Do you have a recipe or technique that produces great results?

    And, from the LTH Picnic Recipe thread, Lechon Asado - which would probably make a darn good taco.

    Not grilled. But Conchita (sometimes called conchinita) Pibil makes a great fall taco.

    While not a recipe, but more of a suggestion:

    Season your shoulder how you want it.
    Roast, bake, pit roast, deep fry, bbq low and slow..just DON'T overcook it.

    It's hard to imagine a nicely seasoned, well cooked pork shoulder NOT making great tacos. Cilantro, onion, salsa, and fresh / griddled tortillas. We're talking fatty pork with bones. No need to overthink it. It's already 75% perfect as is.

    I always make tacos with the left over pulled pork I get from a smoked pork butt, the tacos are even better with an overeasy egg on top.

    Good point. I'll be thinking about the rub/marinade from these suggestions.
