My jokes can be corny and today is gonna be a corn-y day. I acquired a can of TJ corn which claims to be "a unique variety of corn, stays crisp and fresh even when canned. It is naturally sweet, no sugar has been added." Hmm, this intrigues me. If there are any vegetables I buy frozen, it's peas and corn.
Today's menu: corn three ways.
Breakfast - roasted corn omlette wraps. The sweetness of the corn did shine through no doubt due to the caramelization from pan roasting the corn.
Lunch: corn soup- milk, flour, spices, corn. Delicious.
Dinner to be: spicy corn curry
The results so far: sure beats that freeze dried taste.
