Chocolate Pasta and Sausage The combination of chocolate and meat is, gut reaction, kind of viscerally off-putting, especially to those of us who taste chocolate mainly in candy. Of course, many of us enjoy mole with chicken or lamb so it’s not an alien concept.
Few months ago, I bought some chocolate pasta from
Papadelle Pasta at the French Market. Finally got around to making it last night.
My first thought was to have it as kind of dessert pasta, but then we were casting about for dinner options, and I decided to throw it together with some sweet and hot peppers and some “hot” Italian sausage (which, like most Italian foodstuffs designated as “hot,” is hardly enough to register on my personal Scoville scale).

Turns out, the pasta was surprisingly sweet, but combined with the spiciness of the peppers and the pork meat, it was pleasant. If I were to buy more, though, I think I might use it as a pasta dessert as originally planned. I’m not sure the chocolate would go well with tomato sauce…but maybe.
I doubt I’ll be buying more chocolate pasta.
