    I have to know if I'm just an idiot or if the restaurants haven't prepared them properly. Recently, on two separate occasions at two different, well-reviewed restaurants, I received legumes (once simple peas and the other black eyed peas and fresh green soybeans) that were nearly crunchy. Are they supposed to be prepared like this?

    A common mistake made in the kitchen is blanching vegetables rather than cooking them. And if the cooks and chef neglect to taste every single item...well, the guest ends up with raw vegetables rather than cooked. I've seen this over and over.

    So no, lentils, peas, black eyed peas, black beans...etc...shouldn't be crunchy in my opinion.
