No Nitrates

There used to be a great polish butcher shop in Niles that made sausage and bacon without nitrates, but they sold and the new owner does not make them.

I know whole foods has them but they don't taste right to me.

Does anyone have a suggestion?

I know they are not made by the butcher, but we like Han's All Natural Chicken Sausage Links from the refrigerated section. We buy ours at Costco but I have also seen them at Trader Joe's. They have no nitrates and are pretty darn good. We especially like the "Italian Sausage" version. I hope this helps.
