    I have been extremely busy the last few weeks. Family issues on both my husband and my side of the family were a plenty. I had no real time to cook anything that was not pasta or rice and black beans. Needless to say, while I love my black bean recipe, I really don't want to eat rice or pasta again for a while. I finally have some time so I have been tackling a lot of the things I have wanted to attempt at making for weeks: lard crusted pizza, cheddar cheese and chorizo mashed potatoes and this butterscotch pudding recipe someone posted here in recent weeks. http://simplyrecipes.com/recipes/butterscotch_pudding/

    Yesterday, in between pizza dough risings I decided to tackle the pudding. Instead of using the ramekins like the recipe calls for I used a large bowl. I didn't want to use ramekins because it is just my husband and I and we weren't going to tackle eating them all right then and there. I had a heavy duty bowl that I thought was oven proof. I even asked my husband to confirm that it would be okay to put in the oven. He said fine. The bowl made more sense since it would be easy to cover with foil and store in the frig. Pudding came out fine, I took it out of the oven and I even ate some while it sat around cooling down. It was really good. Unfortunately, we didn't get to enjoy the rest. When I picked the bowl up to get out of that pan of water, litterally the top half of the bowl came off. I screamed for my husband who deduced that a few pieces probably fell into the pudding. I should have taken pictures of how perfectly that top half came off but I was just so disappointed and pissed I wasn't going to be able to eat any pudding later. And, man, was I pissed.

    I needed some more brown sugar, so I bought some this morning at Caputo's and tackled it again this afternoon. This time I put it in a Pyrex bowl and all went well. It was in the oven and I was washing my dirty dishes when I realized a mistake I had made: I used the whole eggs instead of separating the egg yolks. Oh, it came out fine but the consistency is very custard like as opposed to pudding like. Now I have two choices: I can try for a number three try tomorrow or just give it up and move on to something else. Hmm, I did want to tackle a lard crusted pie.

    MMmmm I love butterscotch pudding. This sounds really good. I also really like butterscotch pie. I will try to give that recipe a whirl.

    Hi,

    Using whole eggs or only yolks, this is a custard based pudding.

    Some puddings use cornstarch or flour for thickening. I saw a recipe on Epicurious that used both egg yolks and cornstarch.

    I hope the butterscotch tasted as good as it looks.

    Cathy, it did taste good. I didn't even have any until today and it wasn't bad at all, but also not what I thought it would be. Now butterscotch pie, maybe Toria is onto something.
